BEST OF BOTH WORLDS SPREAD
1 Cup butter 1 Cup extra virgin olive oil--mild flavoured
Soften the butter to room temperture. Cover to prevent it oxidizing. Mix it with electric beaters until smooth then add the olive oil to incorporate it. Pour it into a container with a lid and store in the fridge. It will set hard in the fridge but is readily spreadable. It will soften at room temperture. In summer I prefer to add 10% more butter to make a firmer product. Subsitute for butter or margarine - even in cooking!
