BLUEBERRY MUFFINS

125g blueberries
1.5 cups SR flower
0.5 cup plain flour
2 eggs
0.75 cup milk (or enough to make batter)
0.33 cup extra virgin olive oil
1 set of deep muffin pans

Sift the flours into a mixing bowl. Stir in suger and make a well in the middle. Beat
eggs, add milk and oil and then pour into flour mixture.Add Blueberries. Grease muffin
tin well with oil ( adding a pinch of flour as well to give a nice crust underneath). Divide
the muffin mix between the 12 muffin cups. Bake in a hot oven for 20 to 25 minutes.
Allow muffins to stand for a few minutes then carefully remove them. Serve warm or cold.
Makes 12 large muffins
